Chitosan is the production of deacetylated chitin from the shells of snow crab, which is also called chionoecetes opilio. Chitosan is odorless, tasteless off-white powder, slightly soluble in wate, hardly soluble in ethanol. The solubility of chitosan is determined by its degree of deacetylation, viscosity, and molecular weight. Higher degree of deacetylation, smaller molecular weight and less viscosity will lead to better solubility. Chitosan has good adsorbability, permeability, flexibility, hygroscopicity, biodegradability, antibacterial and moisturizing properties. It can be used in many fields.
