    For filling food, the sodium alginate acts as binding agent, its additive rate takes 0.1-0.7%. Its high hydratability prevents the moisture clinging to stabilizer from forming ice crystals.

     

    Sodium alginate for filling food, meat sauce, meat juice, cold and frozen foods, chocolate, buttered candies, gels, gelatine candies, syrup, emulsion etc, its additive rate 0.1-0.5%.

    In beers the sodium alginate acts as the curing remover, agglomerating with protein and tannin for removal.

    Sodium alginate can be made to thin film for anti-sticky packages of candies.
