rhamnose in a ratio of 2:1:1.In the natural high acetyl structure, there are acetyl and glyceryl groups, both of which are located
on the same glucose group, and on average, there is one glyceryl group in each repeated structure, and one acetyl group in every
two repeated structures.After saponification with KOH, it was changed into low acetyl gellan adhesive.Glucuronic acid groups can
be neutralized by potassium, sodium, calcium, and magnesium salts.It also contains a small amount of nitrogen produced by
fermentation
