Introduction:

Lutein is a xanthophyll naturally occurring carotenoids. It is synthesized only by plants and like other xanthophylls is found in high quantities in green leafy vegetables. Lutein is employed as an antioxidant and for blue light absorption. Among the carotenoids, lutein and zeaxanthin are the only two that cross the blood-retina barrier to form macular pigment (MP) in the eye.What’s more, due to lutein natural orange and yellow color it can be used as natural pigment in food application and other field.
