    About The Detailed Introduction Of Polylysine?

     

    Polylysine powder is highly hygroscopic and slightly bitter. It is a linear polymer of lysine. It was first discovered in 1977 by Japanese scholar S. Shima and H. During the screening of microorganisms, Sakai found that it is produced by fermentation of Streptomyces and has a broad-spectrum antibacterial effect. It is polymerized from 25-30 lysine groups and is relatively stable to pH and heat. Its antibacterial effect is related to the degree of polymerization and the environment. The best antibacterial activity is between 3600-4300 molecular weight. At the same time, its hydrolyzate is lysine necessary for the human body, so polylysine is called a nutritional bacteriostatic agent. It was used in food preservatives in the 1980s, but it has not been used in my country for a long time. In 2014, the former National Health and Family Planning Commission approved ε-polylysine as a new food additive. As a natural preservative, it has unique application conditions. Similar to nisin, the benchmark natural preservative, both are polypeptide preservatives, and polylysine has a wider antibacterial range than nisin. Most natural preservatives have a good antibacterial effect on Gram-positive bacteria, but have no obvious effect on Gram-negative bacteria such as Escherichia coli. The emergence of polylysine breaks this "hidden rule". It also has obvious antibacterial and killing effects on Gram-negative bacteria such as Escherichia coli and Arthrobacter, and has outstanding broad-spectrum antibacterial effects.

    ε-polylysine (ε-poly-L-lysine, referred to as ε-PL) is produced by Streptomyces albulus through liquid deep aerobic fermentation and contains 25 to 35 L-lysine residues. The homomeric monomer polymer has obvious inhibitory effects on Gram-positive and Gram-negative bacteria, yeasts, molds, viruses, etc., and is widely used in food, daily chemical, pharmaceutical and other industries. This substance can be completely digested and absorbed by the human body and decomposed into lysine necessary for the human body without any toxic or side effects.
    1. Broad Antibacterial Spectrum: can effectively inhibit Gram-positive and Gram-negative bacteria, yeasts, molds, viruses and other microorganisms.
    2. High Temperature Resistance: It does not decompose under high temperature environment (121℃, 30 minutes), so it can participate in the heat treatment process of products and be processed together with raw materials.

    6. High Safety: The LD50 of polylysine in the acute toxicology test is 5g/kg, which is equivalent to table salt. After the human body ingests polylysine, it can be degraded into lysine nutrients, which can be absorbed and utilized without any toxic or side effects.
